Today is Sunday. It’s the Lord’s day (as are all days), but it is also the anniversary of my youngest child’s birth. She is 31. I’m truly amazed so much time has passed since the first moment I looked upon her face. She and her children will come here after church, and we will share a birthday lunch. One of her friends baked her a birthday cake yesterday so we will celebrate with a blueberry cobbler. It’s blueberry time in Mississippi, and they are plentiful. Minutes ago I pulled golden brown cobbler out of the oven. It looks and smells wonderful! It has a sugar glaze giving it a white look in the picture.
Silent Shade Cobbler
5 cups fresh or frozen blueberries
2 Tbsp. fresh lemon juice
2 cups unbleached all-purpose flour
2 tsp. baking powder
1 tsp. salt
1/4 tsp. freshly grated nutmeg
1/4 tsp. ground mace
3 cups sugar
1 cup whole milk
5 Tbsp. unsalted butter, softened
1/2 tsp. vanilla extract
2 Tbsp. cornstarch
1 1/2 cups boiling water
Preheat the oven to 350 degrees.
Spread the blueberries in a 9-by-13-inch baking dish. Drizzle the lemon juice over the berries and set aside.
In a medium bowl, combine the flour, baking powder, 1/2 teaspoon of the salt, the nutmeg, mace, 1 1/2 cups of the sugar, the milk, butter and vanilla. Spoon over the berries and spread in an even layer.
In a small bowl, combine the remaining 1 1/2 cups sugar, the remaining 1/2 teaspoon salt and the cornstarch. Sprinkle this mixture over the batter.
Pour the boiling water evenly over the top of the cobbler. Poke a few holes down in the batter with the handle of a wooden spoon. Bake for 1 hour or until the top is golden brown, frosted and shiny. Serve warm or at room temperature.

Hi, Bethany. The cobbler is delicious, but I warn you. It is sweet! I’ve been on a very low refined sugar diet for several months, and one serving was an overload. I think I got a year’s worth. No one else seemed to think it was too sweet so it was probably just me. For the record, I had no mace and used none. It was still plenty good. Of course, we added a little vanilla ice cream on top.

The cobbler is good. I did forget my diet to give it a try. And ya know what? The chicken casserole and the cobbler went home with Molly for their supper tonight. The temptation to repeat is gone. Praise the Lord!

Oh WOW!! That’s looks great. I can’t wait until our blueberries in PA are ripe. We have a whole mountain side near by that is full of wild blueberries free for the picking…you just have to contend with the rattlesnakes. Seriously, they hold a rattlesnake hunt on that mountain every year. I’m not sure if the blueberries are worth taking that chance. I went picking up there once when I was a kid. You know, back when I was invincible and fearless
The cobbler is good, Angie…but good enough to brave rattlesnakes…I’m not sure.
We’ve got rattlers here, too, and I don’t want to tangle with them. I wish I could send you some berries…or drop a cobbler by your house.
