Could you please share your recipe for cucumber kimchi? It looks yummy and different from others that I have seen.

I’d be glad to share, but it’s not my recipe. It is yummy. It’s one of Dr. Kim’s recipes. I made it according to his recipe but used more onion. more onion is “more better”. The recipe called for yellow onion…i had purple. Last night before I went to bed I cut a triple batch of cucumbers and salted them down to start making the brine. The stuff is good! I hope you enjoy it.
