This morning I was talking to my friend Marquita on the telephone and told her about a cake I made this week. It is wonderful! I promised to share the recipe. This is for you, Marquita. Remember…I warned you! This cake is not conducive to weight loss. 🙂
Fresh Apple Cake
1 1/4 cup oil
1 teaspoon salt
2 cups sugar
1/2 cup brown sugar
3 cups of all purpose flour
3 eggs
1 teaspoon vanilla
1 teaspoon soda
1 tablespoon cinnamon
1 teaspoon nutmeg
3 cups diced apples (I used diced pears this time, and it was great!)
1 cup of pecans or walnuts
Cream oil, sugar and eggs. Add soda, salt, flour, nutmeg and cinnamon, which have been sifted together. Fold in apples, nuts, and vanilla. Batter will be thick. Pour into a greased tube pan. Bake at 350 degrees for 30 minutes. Reduce temperature to 300 degrees, and bake an additional 60 minutes or until toothpick inserted into center comes out clean. If cake browns before it is completely done slip a sheet of aluminum foil over it for remaining baking time. Be sure to test for doneness before removing from oven.
Topping
1 cup brown sugar
1/2 stick butter
1/8 cup milk
Mix together and cook on medium heat until sugar is well dissolved and mixture begins to thicken. Spread over top of cake while cake is still warm.

oh my…there is a half stick of butter in the topping alone! Sounds like my kind of cake!! You know what they say…an apple a day keeps the dr. away.
This recipe really is dangerous. I shudder to think how much of the one I made I ate. Yikes!
Oh, I am definitely going to make this right now. I wonder how it would be with both apples and pears? Hmmm…I might have to try it.
And thanks for the anniversary wishes. We have been so busy, I canned tomatoes all day Tuesday, I did applesauce yesterday and pears are on the list for tomorrow.

Hey Angie, I can’t imagine why but your comment ended up in the spam blocker. I just caught it. I was thinking about a blend of apple and pear cake myself. I think it would be some of the best of two worlds. I would love to have a bushel or two of apples…they don’t do well here…and tomatoes to can. You go girl!
