Don’t these sound too good? I think I’ll make a batch in the next day or so and freeze most of them so they will be out of sight and not so tempting.
Cowboy Cookies
Makes about 5 dozen
Vegetable oil cooking spray
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 8 ounces (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup light-brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 1/2 cups old-fashioned oats
- 6 ounces semisweet chocolate, cut into 1/4-inch chunks (1 cup)
- 3 ounces (3/4 cup) pecan halves
- 1/2 cup shredded unsweetened coconut
Directions
- Preheat oven to 350 degrees. Coat baking sheets with cooking spray, line with parchment, and spray parchment. Sift flour, baking soda, salt, and baking powder into a medium bowl.
- Beat butter and sugars with a mixer on medium-high until pale and creamy, about 3 minutes. Reduce speed to medium. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla.
- Reduce speed to low, and slowly add flour mixture, beating until just incorporated. Beat in oats, chocolate, pecans, and coconut until combined. (Dough can be refrigerated for up to 3 days.)
- Using a 1 1/2-inch ice cream scoop or a small spoon, drop dough onto baking sheets, spacing 3 inches apart.
- Bake until edges of cookies begin to brown, 11 to 13 minutes. Transfer baking sheets to wire rack, and let cool for 5 minutes. Transfer cookies to racks. Let cool. (Cookies can be stored up to 3 days.)

i just made up a batch of these and they are fantastic! i think i’ll try them with milk chocolate next time though….or maybe leave the chocolate out entirely. whichever way i decide, they’ll be yummy! thanks for sharing the recipe!!
I still haven’t made them…today turned out to be pretty hectic. For some unbeknown reason, I thought about the expiration date of my car tag around noon. It expired in JUNE! Yikes. My “plans” for the day changed quickly and got more expensive. It’s a really good thing I thought about them, because one more month and they would have shot up almost $200.00 in one fell swoop. That would have been disastrous. Our state has a “tag credit” IF you pay your tag tax within 4 months of the due date. I came in just under the wire.
Anyhoo…the reason I want to freeze part of what I make is to avoid the “they never last long” syndrome Angie spoke of. It’s just my honey and me around here, and I’m afraid I’d eat far more than my fair share. Homemade baked goods call my name.
Jayedee, I’m glad you like the cookies. I bought chocolate chunks while I was out…and a variety of other chips for cookies. I’m sure you can’t go wrong with any flavor.
I make these everyyear at christmas for all of kyles many texas guy friends ..they start asking after them about now(november). I made them several times this summer without the chocolate and added rasins …they were extra yummy(merle does not like chocolate…yes he is my child) . I was thinking of adding peanut butter cause like lorretta lynn says it is good in all desserts.
Belle, I don’t see where you could go wrong adding peanut butter. I’m with Loretta on that thought. Peanut butter is a comfort food…peanut butter cookies…more comforting.
