Late this afternoon I decided to pick a recipe from the cookbook, The Busy Family Cookbook by Taste of Home, my mom gave me for Christmas to try out for supper, so this week I’m trying two new recipes. I chose Pork Chops with Onions and Apples. It was simple to prepare and tasted delicious. My DH and I had never eaten onions and apples cooked together, and we both enjoyed the flavor combination. I guess it only figures the sweetness of cooked onion and the sweet/tartness of the cooked apples would marry well. We both agreed this is a repeat recipe.
Since there are only two of us and I am making a valiant effort to get back into healthier eating, I cut the recipe in half. That presented no problem in preparation or results. The recipe meat method is for the grill, but I cooked them on the stove in a cast iron skillet. (It’s raining here tonight, and soggy pork chops didn’t sound too appetizing.) I served it with smothered cabbage. (The cabbage was cut from our garden shortly before supper. That made it taste even better.)

Pork Chops with Onions and Apples
SERVINGS: 4
CATEGORY: Main Dish
METHOD: Grill (gas or charcoal)
TIME: Prep/Total Time: 30 min.
Ingredients:
2 teaspoons coarsely ground pepper
1/2 teaspoon salt
1/2 teaspoon garlic powder
4 bone-in center-cut pork loin chops ( 1-inch thick and 8 ounces each)
2 medium onions, thinly sliced
2 medium tart apples, peeled and chopped
2 tablespoons butter
2 tablespoons brown sugar
Directions:
In a small bowl, combine the pepper, salt and garlic powder. Rub over pork chops. Grill chops, covered, over medium heat for 8-10 minutes on each side or until a meat thermometer reads 160°.
Meanwhile, in a large skillet, saute onions and apples in butter until tender. Stir in brown sugar; cook until thickened and bubbly. Serve with pork chops.

Jayedee, there is a bbq place in our town called The Divine Swine. I wanted to order from them on Sunday, but they weren’t open.
Brenda, smothered cabbage is simple. It’s almost fried cabbage. I start with bacon fat…not a lot, but enough to cover the bottom of the skillet lightly. (I know, I know…it’s an artery clogger…but it tastes so good.) Heat the fat and add cabbage that’s been quartered and cut into 3 or 4 inch pieces. Allow the pan to heat back up and pour about a 1/2 cup of water. Let the water steam up and cook off. Season to taste with salt and pepper and about a tablespoon of sugar. Add another 1/2 cup water and allow to steam as before. Do this two or three more times to let the cabbage caramelize a bit. Add another 1/2 cup water and cover with a lid and reduce heat. Cook until tender.
If that’s not clear…ask. My brain is tired this afternoon.

I will have to try the cabbage, it sound good. A little bacon fat never hurt anybody 😀 We had the pork chops tonight and they was DELICIOUS!!! The recipe is going in the cookbook. Thank you so much.
I knew it was good. Hee hee. I really don’t know how long ago i came up with the idea but one day I browned some pork chops in a pan. All meats were seasoned with salt, pepper, onion powder, and garlic powder. they were thick so I poured apple juice in the pan and let them simmer. Then I made a gravy out of the liquid and seasoned with more salt, pepper, onion power, and garlic salt. My family loved it. Later I did it differently in my crockpot. I would brown pork chops then transfer to crockpot I would top it with sliced onions and minced garlic. Then add another layer of pork chops and top with more onions and garlic. Then I would pour apple juice over all. Before time to eat I would pour liquid into a pan and make a thickening of apple juice and flour shook in a covered jar. If it needed any more seasoning it was usually just salt a pepper. I could never make enough mashed potatoes and gravy with this for my family they just loved it. Once fed a older couple in my church a meal like this and after they ate it and told me how good it was I told them the gravy was made with apple juice and they were surprised.
