Chicken Divan

Ingredients
* 2 (10-ounce) packages frozen broccoli, chopped
* 6 cups shredded chicken, cooked
* 2 (10 3/4-ounce) cans condensed cream of mushroom soup
* 1 cup mayonnaise
* 1 cup sour cream
* 1 cup grated sharp Cheddar
* 1 tablespoon fresh lemon juice
* 1 teaspoon curry powder
* Salt and pepper
* 1/2 cup dry white wine
* 1/2 cup freshly grated Parmesan
* 1/2 cup soft bread crumbs
* 2 tablespoons butter, melted
Directions
Preheat oven to 350 degrees F.
Remove the outer wrappers from the boxes of broccoli. Open 1 end of each box. Microwave on full power for 2 minutes, until thawed. Drain the broccoli and put into a casserole dish. Add the shredded chicken.
In a medium bowl, combine the soup, mayonnaise, sour cream, Cheddar, lemon juice, curry powder, salt and pepper, to taste, and wine. Whisk together to make a sauce. Pour the sauce over the broccoli and chicken. Mix well with a spatula.
Place the mixture into an 11 by 7-inch casserole dish or 2 (9-inch) square disposable aluminum foil pans that have been sprayed with vegetable oil cooking spray. Pat down evenly and smooth with a spatula. Combine the Parmesan, bread crumbs and butter and sprinkle over the top.
Bake for about 30 to 45 minutes.
Cook’s Note: Try topping with Cheddar or Gruyere cheese.

Well reading the ingredients sounds like it would be good. Sorry it wasn’t to your liking. I wouldn’t mine making it at least once but rarely any food in my house.
Funny I typed in google for dry white wine for cooking and the first thing i read is don’t use a wine you wouldn’t drink a glass of. Hee hee! that would elinminate all wines cause i don’t like any for drinking. Not just because I’m a christian but because wine taste nasty to me. However I do buy a bottle of port wine once in a blue moon. There is a good chicken a shrimp dish I like to make and i double or triple the sauce for it and make rice to go with it to make it go further. ( Haven’t actually done this in about 3 years). Anyways, The bottle of port wine is not emptyt with that dish so I would make a beef pot raost with it or round staek in a crock pot with it. My son love the round staek with wine. So port wine is the only I’ve ever used for cooking. However I would like to make Chicken Marsala or bourbon chicken sometime too.
Too much fattening “gooo”! Eliminate the mayo and sour cream and substitute a can of cream of chicken soup! That would be much healthier and not so heavy I would think. Too bad, not every recipe will be a winner.
I hate it when a recipe doesn’t turn out quite like you want it to. I have had many turn out yucky.
I still think it’s great that you are trying new things, hopefully the next one is more to your liking. 🙂
awwww….so sorry it didn’t turn out. It does sound rich with the soup, mayo, and sour cream. We all have those lovely recipes that sound yummy on paper but not in our mouths. 😉
