Egg count to date…116. We’re beginning to roll in eggs. I’ve used many and shared some, but more need to go while they are still fresh. We’re blessed with some happy chickens!

ohhh. fresh eggs. good for you! so envious. I’m sure you and hubby are enjoying them.
noodles! make homemade noodles. they use lots of eggs and freeze well too. angel food cakes, puddings with the yolks left from the cake or maybe a nice lemon curd. they say you can freeze eggs too although i’ve never done it.
and don’t forget to bake those shells, crush them with your rolling pin and feed ’em right back to the girls! you can sprinkle them under your bird feeders too!

Jayedee, thank you for the brain jog of what to do with the yolks. I think I’ll make a batch of lemon curd today. I’ve read about freezing eggs…if I remember rightly, they need to be scrambled before going into the freezer.
I was reading a technique of preserving whole, unbroken eggs in a crock the other day…I had never heard of it.
